Collard Green Tostadas with Crumbled Feta
Crispy bacon, sautéed onion, and tomatoes elevates these Southern-style collard greens tostadas, making them an essential “good health” lunch meal!
4 slices of whole wheat pita bread
1 cup store bought plain hummus
3 cups cooked collard greens (see southern-style collard green post)
½ cup mixed cherry tomatoes, halved
3 oz. cup crumbled feta cheese
Preheat the oven to 350 degrees, and line a baking sheet with foil. Arrange the pitta breads in a flat layer on the baking sheet and drizzle lightly with olive oil. Bake in the oven for 4-5 minutes or until the bread is hot and toasty. Remove the bread from the oven. Let cool. Spread each pita generously with hummus (about one tablespoon), then top each with collard greens, sliced tomatoes, and crumbled feta cheese. Serve immediately.
