Zesty Bean Salad With Crumbled Feta

Enjoy the tasty side of healthy with this Zesty Bean Salad with Crumbled Feta. It is the perfect sidekick for weeknight-grilled chicken meals. 

Recipe yields 4 servings

1 Bunch radish, thinly sliced
2 Scallions (white parts only), chopped
1 Cup cumbers, peeled, small diced
2 Tablespoons capers
1 (15oz can) Small white beans, drained, rinsed
1 (9oz bag) Frozen lima beans, thawed
2 Tablespoons fresh basil, chopped
2 Limes, juiced
2/3 Cup olive oil
1 Tablespoon white vinegar
2 Teaspoons salt and freshly ground black pepper
1 Teaspoon ground cinnamon
6oz Crumble feta cheese
1 Small head salad greens (Bibb lettuce or green leaf), chopped

Add the radish, scallion, cucumbers, capers, white beans, lima beans and basil in a large bowl. Add the lime juice, olive oil, vinegar, salt, pepper and cinnamon and toss well. Let stand for 3 minutes (or overnight). Add the crumble feta and salad greens, gently fold into bean mixture. Adjust seasoning as needed. Serve salad at room along with crusty whole wheat bread or skillet cornbread.
