Banana Cornbread with Honey Drizzle

Banana cornbread is always a huge hit. It’s delicious and I‘ve yet to find anyone who hasn’t liked it!

MAKES: 6-8 Servings

PREP TIME: 5 Minutes

COOK TIME: 20 Minutes

INGREDIENTS:

  • 1 pkg. Jiffy Cornbread Muffin Mix

  • 1 pkg. Jiffy Banana Muffin Mix

  • 2 Eggs (for the Jiffy mix)

  • 1/3 Cup milk or almond milk (for the Jiffy mix)

  • 8.25oz (can) cream-style corn 

  • 1 tsp. ground nutmeg

  • 1 tsp. ground cinnamon

  • 1 tbsp. dark brown sugar

  • 2 tsp. vanilla extract

  • Honey to drizzle

  • Strawberry preserves

DIRECTIONS:

Preheat oven to 400 degrees. In a medium bowl, prepare both mixtures according to box instructions, then add cream-style corn, nutmeg, sugar and vanilla, stir to mix. Spray an 8” square baking pan (or standard loaf pan) with non-stick spray, pour the batter into baking pan and place in the middle rack in oven. Bake until golden brown. (20-25 minutes) Remove from oven and drizzle lightly with honey and serve with strawberry preserves.

NOTE:

Check cornbread with a toothpick in the center, if still moist transfer to top rack in oven and bake for a few minutes longer.
