Grilled Sirloin Steak with Balsamic Tomatoes 

Is there anything more delicious than a steak? Uh, how about one topped with banging balsamic tomatoes! For this dish, I use beef sirloin because of its tenderness and flavor. The colorful tomato topping will make your plate pop and your taste buds dance!

MAKES: 4 Servings

PREP TIME: 5 Minutes

COOK TIME: 15 Minutes

INGREDIENTS:

  • 1 1/2 pound sirloin steak, 1/4 inch thick 

  • 1 tbsp. olive oil, more for drizzle

  • 1/4 tsp. smoked paprika

  • Kosher salt, freshly ground 

  • Freshly ground black pepper 

  • 1 cup mixed cherry tomatoes, halved

  • 1 medium red onion, thinly sliced

  • 1/2 cup chopped cucumber

  • 1/2 cup corn

  • 3 tbsp. balsamic vinegar

  • 1 tsp. red pepper flakes

  • 1/4 cup chopped cilantro

DIRECTIONS:

Preheat grill pan to high heat and coat with cooking spray. Pierce the steak in a few spots with a fork. Brush the steak with olive oil, season with paprika, salt and pepper to taste. 

Grill the steak for 6 minutes per side for medium rare. Place the steak on a cutting board, let rest for 5 minutes. 

While the steak cooks, add the tomatoes, red onions, cucumber, corn, vinegar, red pepper flakes and cilantro to a bowl. 

Drizzle mixture with olive oil, season with salt and pepper to taste, mix well. Slice steak and serve on a platter, top with balsamic tomatoes.
