Smoked Avocado Sauce

a.k.a. “Green Sauce”

Whenever I visit family or friends they say, “Kenny, you’re bringing that green sauce with you, right?” Well, that “green sauce” they so enjoy is this smoked avocado sauce. The key to making this good-for-you sauce is choosing the perfectly ripe avocado – slightly soft, but not dark and sunken. The texture of the finished sauce is so smooth and creamy with a distinct smoky flavor. Swirl it into your favorite pasta dish or use it as a bold flavor sandwich spread. 

MAKES: About 2 cups

PREP TIME: 5 Minutes

COOK TIME: 5 Minutes

INGREDIENTS:

  • 1 ripe avocado, halved and pitted 

  • 1 1/2 cups mayo

  • 2 garlic cloves, peeled

  • 1/4 tsp. ground cumin 

  • 1/4 tsp. salt

  • 1/2 tbsp. ground black pepper

  • 1 tbsp. onion powder

  • 10 large basil leaves

  • 1/2 tsp. Hickory Liquid Smoke

  • Juice of 1 lemon

  • 1/2 cup Parmesan cheese

DIRECTIONS:

Place all ingredients into a blender or food processor, blend on low speed until smooth. Taste and adjust with seasonings, if needed. Can be stored in the refrigerator in an airtight container for up to 2-3 weeks.
